Can i run eyefinity on:

1x 1920x1200
2x 1920x1080

with black bars on the 1200 screen that is..... or will it simply not work
 
If the 1920x1200 can run 1920x1080 then it will work. They all have to be running the same res.

just choose the 3x1920x1080 resolution (i.e. 5760x1080 or 3240x1920, assuming no bezel-compensation). However, the 1920x1200 monitor is going to look a bit blurry and odd compared to the native 1080p screens. Even so, eyefinity is not guaranteed to work properly unless you use exactly identical monitors.
 
as long as all 3 monitors can run the same resolution it should work just fine. I run 2 benq 1920x1080 and 1 viewsonic 1680x1050 monitor and it works fine, my 2 benq's just lower down to 1680x1050 and play just fine (and looks fine). ONly thing you lose out on by running different monitors is you cant do bezel compensation.
 
As to the OP's original question, the 1920x1200 monitor will not run with black bars at 1920x1080 to match the other two. Instead, it will be running non-native res full screen, and depending on screen sizes, may or may not match up in a way you're happy with
