I cant find any info on this but is storage vmotion of a live none clustered Exchange 2007 server ok to do or are there potential big issues?
 
There are definitely worse things you could do. How many users? What's the array? What kind of load? When are you going to migrate it?

^ what he said. Unless it's a monstrosity of a server you should be fine to do it sometime after hours.
 
it is going to be out of hours, we have the datastores in the VM instead of iscsi luns, not perfect. I think it will be fine though.

I would say running a single instance of exchange is worse than vmotion.
