Whenever I play a video (quicktime, windows media player, whatever), it takes over my second monitor and plays that video full screen. Where is the option to turn this off?

In the display properties somewhere.
Just where depends on what video card/drivers you're running...

this shouldn't be enabled by default in nvidia drivers...but there is a setting for it...look for fullscreen video playback or "overlay" mode...
