I have my dual setup up and running but I have a few questions.

Can I use the other screen while playing any games? :like UT2004 and CounterStrike Source without it minimizing the game? I've tried it a few times but it always minimizes the game.
 
No, you cannot; moving to the other screen is equivalent to alt tabbing out. Unless you play the game windowed, there's nothing you can do to avoid this (to my knowledge).
