The tubes used in water cooling can kink if you need to make tight bends in the tubing. Sometime you may even need to use elbows but this stuff makes it so you dont need elbows at all. It is also cheaper than using clearflex or tygon.
And yes it also look cool.

What's the inner diameter of that stuff? Is the inside smooth or does it have ridges in it?

Its just a little bit smaller diameter than the tube and it is smooth.

Ah, that's cool, never seen it before. I thought it was that corrugated-type tubing at first. So what kind/size tubing is that in the picture?

very cheap 1/2" OD 1/8" wall vinyl tube
