I have two servers I've been dicking around with. A dell r710 and a HP DL380 G7. I want to try and bypass the internal raid controller in order to run the drives singularly and then run something akin to ZFS on one and Unraid on the other. Is there an easy/viable way to go about this? My google-fu has been weak in finding a set means to go about it...
 
You'll want to replace the P410i that comes in the HP DL380 G7. One of the LSI HBA cards should do the trick.
Not sure how the R710 is setup. If it's a PCI-E card, replace with an LSI HBA. If it's the motherboard integrated, disable the raid functionality.

I'm running three 9211-8i LSA HBA's w/HP SAS Expanders in two UnRaid servers and one ZFS server. All running wonderfully.

That sounds viable. I'm a novice at best with rackmount server eqpt and am curious, if I use one of these drop in cards will I still be able to use the standard drive mounting or would I need to run SATA cables from the drop-in to the drives?
 
You should be able to use the standard drive mounting, both the P410i and the LSI HBA's stick to the SAS2 standard. It shouldn't be an issue. SAS is pretty flexible, much more so than straight up SCSI
