Which ones, and for what hardware?

All I've used so far is Prime95. Does that test both CPU AND memory, or just CPU?
 
Prime95 tests a single CPU core.
You need to run multiple copies and assign CPU core affinity (using task manager) for each copy.
To test 2 cores at once you can use Orthos which is a dual core version of Prime95.
They can test CPU, memory or both, I found "both" to be ineffective but others claim different.

Many people use Furmark to test video overclocks but no game ever pushes your gfx card that hard so you might not get as high an overclock.
Its a good tool for making sure you get a 100% stable overclock or if you arent bothered about getting the absolute max.
The alternative is to use games and benchmarks like 3DMark05, Unigine Heaven to stability test your gfx.

Hmm, why under Prime 95 64-bit during testing does both my CPU cores max out to 100%? Does this not mean both are being tested?
 
Orthos (custom: 80% memory) and Furmark will usually bring a system down mighty quickly if its got a problem...
 
LinX - No fuss, no thrills and it takes my system to hell and back!
 
Prime 95 hits all 4 cores on my setup. Passed 16 hours strait no problem. I have also used Intel burn in test and OCCT.
