So today, my WD 800JB just crapped out. This drive was an RMA replacement for a drive that I bought on 06/11/2003. Now it's time to RMA again.. is it something I'm doing wrong? is my computer just an HD eating monster? My specs are in my Sig.. + I'm using an Enermax 350W PSU

Just read the stickies on what kills drives. Generally there's a direct correlation between drive deaths and the amount of time you spend dicking around inside the case. If not that, start at the PSU and work your way towards the drives in tests (monitor voltage swings, calculate your amp load and make sure the enermax can handle it, check the processor and memory, the controller, etc.).
 
Odd, the last thing i did was install my DVDRW, which went on the Secondary IDE channel... oh well, I guess me + WD = bad karma
 
It is definitely possible you bumped something or let lose some ESD. Everytime I work on my fileserver one of the disks stops working until I reseat all its cables. Doesn't matter if I never even come near it, the thing will still stop working.
