I would splurge $300 on the 5850 if you're wanting DX11 and some room for the future.
If you don't mind forgoing DX11, get the 4890 for now and in half a year buy a second one for cross-fire.

I'm in the same situation. My current rig is an E8400 with a non-sli or xfire P35 mobo, and one 8800GTS G92.
Since my cpu is nicely O/C'd to 4Ghz, I find that this is plenty of CPU for most games I play at 1680x1050. So the route I took was:
1.) Purchased used 790i ($150)

Just remember as you've mentioned already - your 680i is not Crossfire capable. So if you pick one up and want to get another after you return, you'll have to change your mobo as well.
