Your range and speeds will most likely increase if comparing to your current router. The real beauty of Ubiquiti hardware is the management capabilities, stability and performance IMO.

the one provided by Microsoft works pretty good. I've yet to run into problems with the USB creation tool that Msft provides for Win10 and i've done probably 30 or so installs using them. Have yet to convert any MBR to GPT as I've always started fresh. Just didnt want to deal with the headache.

Your def thinking right on the troubleshooting. My guess would be a driver which seems like you are head deep in that already. I've had some similar issues before but not onboard disk, usually with a raid card and not having the correct drivers.
Not sure what "boot off the DOK" means but couple items i've had to set with most of the Windows Server installs i've done is within BIOS:
1) Boot menu -> turn off all boot drives except for the SSD

definitely go for a combination of applications as there is not 1 solution that does it all well. The full version of Malwarebytes and I use the Panda Security free app. This has worked well for me.
