So, to review...
Requirements:
- 24/7 Operation
- Low Power
- 4-6 Disks
- Redundancy (raid 5 was listed)
- 1080p transcoding
I would say a DIY option. I have the N40L, and it works great for me; but, I don't think its powerful enough to transcode HD efficiently.. If you don't need the HD...
I love my HyperX, I definitely recommend it to anyone looking to purchase a new SSD. I've had mine for a few months now and I have yet to see any issues.
The backplane has power and data wired in already, you don't need to wire anything if you use the 4 provided hard drive spaces. There is also the option to add a something in the 5.25in drive space; you could put that DVD burner there or the SSD for example.. though, you won't get the full SATA...
Its not as small as the Gunstix, but a SheevaPlug is pretty tiny...

I have one running Debian Lenny, I use it for torrents... it works pretty well, its been up for 80 days right now... gotta love linux
just an fyi, wd blacks are not recommended for RAID(according to WD). a lot of people say they drop out every now and then. i personally havent tried it, so i dont know. I own 1 wd 1tb black drive and i love it.
If you take what WD says at face value, my recommendation would be to short stroke...
It is fine for stock usage. Remember though, these chips do run a bit hot; so it might be a decent investment to upgrade your cooling.
I figure, if you are going to spend the money on a new processor, spend a bit more and buy an aftermarket cooler

Why?
My old P4 rig worked well, but I wanted to play newer games and watch blu ray. I was going to get a Core2Quad, but then I heard about the i7...
I have the CM V8, it does a pretty good job at keeping things cool. just remember that you are still dumping heat into the case, so you still need decent case fans... or just dont use a case i guess
I recently built a rig using many of the same components as you. if gaming is your main criteria, i believe you have a great setup for it; especially if you want to overclock the i7.
I own an Evga GTX285. It definetly does the job, but I think it's overkill for your gaming resolution.
I would go with the GTX260, it will probably handle everything you throw at it and you will still have the ability to play at a higher resolution if you want.
Lost 2 7200.11 1 TB drives - ST31000340AS to be exact.
Drives were placed in antistatic bags and then wrapped together and put into a box. The Bbox was half full with packing peanuts.
One drive was DOA, the other worked for a few hours but wouldnt stop clicking the entire time.
Both died...
