It's a two post rack. Yes, you can use rails provided that the rails are center mounted or supported in some way. Many smaller 1u servers have provisions in their brackets to allow this. The larger and real heavy servers does not have this (some do) so you will require a center mounted shelf...
2.5kw for a home setup is a lot of power utility wise. I am a cheap bastard when it comes to energy spending :) I would factor power usage into the equation to determine if I shouldn't just halve my disks and get disks double the capacity instead.
It is sure a fun play thing, but you need the full chassis to make these of any use. The chassis is cheap, but it's a big unit and it's a loud unit and it's power supplies will want 208/240v power fed to it.

No, not challenger units, but rather CRV's instead of the DS. With a single unit you can't account for ground out protection when your compressor blows, breaker failures, refrigerant leaks, compressor failures (although you should have two on a 12ton unit), main shaft failure, shaft bearing...
You should ditch the DS unit and go with two or three CRV's instead. A CRV produces 35KW (10Tons) in a line matching cabinet footprint. It will take up less floor room, provide better air management, more peak cooling capacity, more ideally designed for your senario... and the most important...
Since you are just using a simple mini split... I would highly recommend MovinCool units as your alternative. They are cheaper than a mini split (if you factor installation costs) and they are brain dead simple to use and bulletproof. You would need to duct to the outside for your hot air but...
