My wife and I are both heavy PC gamers but we tend to like very different things. Im hoping someone can point me in the right direction towards something we would both enjoy based on our interests. The only game we have really played together quite a bit if Fortnite because she likes the balance of gaming, exploration and fashion. I know this is a lot of information to compress, but any help is appreciated.

If I had to categorize it, these are some of the tags I would be after.

Outward - Neither of us are really into survival, but its 5$ right now and might be worth a shot.
Borderlands - Might be too much shooting for her. Not sure shed understand the loot system
 
Not sure, but three games my daughter and I play/played together that's not in that list:
RuneScape: Dragonwilds
Grounded (Grounded 2 is out, but we haven't played it)
Medieval Dynasty

She mostly likes 2D games, so there's not much I can recommend. She does like Palia and Palworld like your wife does.
 
Maybe Satisfactory. It's got exploring and building.

SarCraft 2 has a bunch of co-op missions you can play.

I liked playing the We Were Here Together series coop. It's a first person puzzle game.

Overcooked is a fun one if you want to test your relationship.

Ive floated the idea of something like Guild Wars or World of Warcraft but we havent tried them out yet.

My son loves "It Takes Two", but my daughter prefers "Split Fiction". It probably won't be something you'd like, but your wife would probably like it. Some indie games like "One Hour One Life" and "Romestead" are pretty fun co-op games to try out if you don't mind 2D survival building games.
 
Maybe a generic recommendation, but No Man's Sky fits all of the 'tags' you listed. I'm not so sure it aligns with the 'styles' of the other games you listed, and it can be an acquired taste in ways, but it does check boxes.

Outward was pretty neat, but I remember it being pretty janky, too. Co-op had some sort of sync issues where I or the other player would have a door refuse to open, things of the sort. But that was a long time ago, so maybe that aspect improved. Also I think not-casual at times; be careful dying somewhere that is hard to reach without the gear you left on the ground.
