Storage (2x5TB WD Black) for home server in Server 2012R2

So I'm trying to set up a new storage server for my home. I purchased the following:

Lenovo ThinkServer TS140 Tower
1 x Samsung 850 EVO 250GB
2 x WD 5TB Black drives

I plan to purchase more drives in the near future (5TB, 6TB, and bigger once they come out). I'd like to install Server 2012 R2 with Update on the SSD. I played around a little with Server 2012R2 and wanted to play/learn/experiment some more.

I was reading up on Storage Pools, Virtual Disks, and so on, but it's still a bit confusing. What's the best way to set up these 2 drives and allow myself easy upgrade/expansion in the future?

And, while I'm at it - should I set up Shares using the File Server role or just create a folder, right click, go to advanced sharing, and set it up that way?

If you are going to set up Raid, you really should be using RE drives!

I agree on the quality and performance and durability of the RE drives... but, for a home server where only about 500GB of photos and documents are CRITICAL (and those are backed up onto another machine AND onto an external hard drive), the rest are movies, music, TV shows, etc. I can live if a drive fails. I'll do some basic redundancy, but anything more would be overkill for my home server.

My biggest question is how best to set this up so that It's easily expandable in the future.
