Hey guys. What do you do to secure information on your computer in case it is stolen? Basically I want to prevent easy access to the information on my computer. Thanks.

Truecrypt.
Make sure your laptop has a password that engages with the screensaver in case it's stolen while sleep/hibernated.

Consider lojack for laptops, they can remotely wipe a laptop and/or help police locate it.

I currently have a password lock when the computer wakes from screen saver. My biggest concern was for my external drives or someone just popping out my laptop hard drive and hooking it up externally to extract it's information. Does TrueCrypt impact IO performance at all?

I do not have specific numbers but my short answer is no. I use TrueCrypt and Pointsec/Checkpoint FDE and I do not notice any issues. I am sure there is some IO lag but with a modern processor I notice nothing. Of course this is just with the manipulation of data files and not gaming or anything of that nature. Also I have never ran test so this is purely observational.

I have Lojack on my laptop, which I highly recommend. After seeing this thread, I'm going to try TrueCyrpt on it too.
