My old PSU/mobo died, so it's time for an upgrade, following the guide here, I put together a list.

Can't decide on RAM. I'll OC as much as these parts will allow stable operation, and was wondering if anyone could help choose on ram, and if they knew of any OC guides based around these parts.

Both of the RAM brands you have listed use Promos chips, and won't overclock well. Expect 440-450 MHz tops (DDR2-880 to DDR2-900). If you want good overclocking RAM, that means Micron D9 chips, which usually means spending more.
 
These Buffalo Firestix are believed to have the Micron D9 chips and cost about the same

Avoid the Corsair 6400 but especially the 6400C4 not only do they not overclock well at 4-4-4-12 but there has been a bad batch of 6400C4 with many DOA sets. I just had to RMA a pair back to newegg today in fact. So bad that newegg sent the entire inventory of those memory sticks back to Corsair for replacement. On the other hand maybe that means the problem has been fixed now. Maybe.

I wish I would have bought Buffalo instead of Corsair but let may my hard lesson bcome your gain. :D

just play it safe and spend an extra $20 on some highly reliable, insanely overclockable micron.

These keep selling out since the whole promos/micron business, so get iit while you can. And don't get it from zzf, I was on the third day of being stuck on "processing" so I gave up and payed $15 more for newegg reliability.
