Both the Core i7 920 and the Core i7 940 have their multipliers locked; only the Core i7 965 features an unlocked multiplier, albeit at a significant premium. All can be overclocked; the lesser end parts simply require tweak of BLCK in lieu of changing the multiplier which the 965 allows.

I find i7 components to be priced very well. When on sale, I purchased the i7 920 and the P6T Deluxe for $254.99 and $245.99 respectively at Newegg. Memory costs are hardly prohibitive either.

I have the silver Thermaltake Tsunami too! (except I purchased mine a few years ago and it lacks the window) :D The memory you've opted for, I fear, is not within Intel's Core i7 memory voltage specification. You should choose DDR3 with maximum voltage of 1.65 as memory with higher voltage...

I purchased the i7 920 with the P6T and hope to perform a slight overclock, perhaps to 3.0GHz. What settings are recommended? I have never overclocked :( Can things be left on auto, or does this danger the system?
