Grab a Phenom x6 and a new aftermarket cooler and jack it up a bit, any CPU bound game should perform much better. I've been an intel man since the phenoms started coming out, but being that your board will except 1 of them its definately worth the upgrade.
7950 crossfire here, my LED-LCD supports 120hz refresh and I find games that run at or above that benefit from V-sync, in BF3 and metro i change my refresh to 60hz and turn v-sync on for a smoother expierience, if i play with it off i get really nasty dips in some areas and i'd rather have 55-60...
With the new openCL AMD drivers coming out the performance of the 7950/7970 is gonna be back on top, AMD says they were not keeping the drivers behind closed doors until NV released keplar, i have my doubts, but with the new drivers my performance was up 10-15%.

As long as you dont force constant voltage its not a problem, both my 7950's need 1.25 to oc past 1050 and temps never breech 65c under 99% load with 65% fan speed. both currently running 1200/1590.
If your OC is unstable anything over stock core settings then you have a low vid on your chip...
Download the latest afterburner beta, enable voltage control, bump voltage to 1250 and core to 1050 and mem to 1500, set fan to 65% manual while you stress test it with some gaming. Bump up 10-15 mhz at a time, till you become unstable and back it down a bit.

I opted for the 7950 just because the sapphire and powercolors stay really low on temps even with overclock. Mine arrives tommorow and in a few weeks a 2nd one will be on order, i have the money for it now, but i want to wait and see how much the drivers improve before i commit.
Well, managed to pull off a nice trade with a Geek Squad local, mt current 2x 580's (replaced by a pair of 7950's) and $250 cash for a 3960x he bought from their supplier. Not sure of C1 or C2 stepping until its in my hands tommorow but it came in to the store yesterday from intel distribution...

Remember that even the drivers they are dropping now are still baby drivers, the product hit the shelf with immature drivers as they always do, so it will take a bit to get them settled out, but AMD knows where the performance hits are and will hopefully work the drivers in that direction.
Simple test, underclock your Vram below default as low as you can and run the benchy again. It will heat much slower, grab a stop watch and start it at your settings now, if the artifacting is delayed after you underclock the Vram then it is an overheating issue.
From what i've seen the 590's are plagued by issues, not to say that there arent some good ones out there, but i know alot of people have had issues. I have noticed as well that the availability has gone to almost nil.
