So, there's not really a way to have 2 cards in the rig and only use certain ones for certain programs? I have two monitors, could I run one monitor off one card for gaming, and the other monitor off the workstation card for SolidWorks?

SolidWorks has "Certified" video cards that you can use (just about every workstation card). They have specific drivers, and enable certain visual features in SolidWorks.
