As you can gather from everyone else's posts, the answer is usually yes but depends on your particular case layout. You're probably more likely to have hassles with re-routing cables than a physical length limitation.
The screen tearing shocked me too when I went from 5850->6970 single card Eyefinity (5760x1200). I have also found that setting the center monitor to be the "preferred" display makes the tearing occur on one of the side monitors.

You can modify the WOW application to be large address aware. This requires a modification of the EXE. I use this because it is necessary for eyefinity setups which can otherwise run out of memory in crowded locations and crash at high resolution/graphic settings. I'm not sure if it has any...
I bought two 5850 for crossfire and tested multiple games at 5700x1200. Some games experienced "microstutter", especially BFBC2. The bottom line was that the experience was more playable with crossfire disabled, so I sold one of the cards back. Call it what you will--I tried plenty of video...

The login menu and in-game experience was the same (normal) for both DX9 and DX11 paths.
FYI I added the DX11 setting to the config file but I have not verified that it took effect (though I have no reason to think otherwise).
It's great for moving windows around and also stuffing things you don't use often (like trade chat, recount, others off to the side that can easily be accessed but don't get in the way.
