I have personally had a case that was 99% similar to that case (I suspect it was the same one) and the issue was that the PSU "clamps" on either side make it difficult to put in a standard size PSU. I would recommend a little wrangling by first removing the ODD or just pushing it forward then...

Yes, Spartan but let's remember there is some slow down with scaling and such across multiple GPU sets that are Crossfired. The 6870x2 will afford you some performance without breaking the bank just before an upgrade but for cost reasons I would go with two 6870's since they seem to be plentiful.
Yes absolutely. Go for it. With most current games you should be able to run at medium-high without any troubles. Of course this is assuming the rest of the system (RAM, PSU, MoBo, etc..) are reliable and of good quality.
