The Win7 kernel is actually pretty efficient. They finally overhauled a lot of the cruft that had built up over the years. As mentioned, there's a lot of userspace MS stuff that's still horribly inefficient, but the actual OS should work...

As nerdalertdk said, just run vCenter on a Windows VM and RDP into it for management.
There's apparently a native Linux version now (no?), if you'd feel better, but I don't have any experience running that way.

Glad to hear it went well! I was in a similar situation, but decided to go AMD as Intel deals seemed K-focused, solid Z68-VT-d info seemed hard to find, and I wanted ECC support going forward.
I imagine you ended up with a much faster rig, though. ;)
