For the uses you've stated so far, an i5 would be fine. If you tend to keep your computers a while before upgrading, then I'd suggest going with the i7.

The desk should not wobble. Is it on carpet? If so, maybe it'll wobble a bit. Find whatever screws are loose and tighten them.

All the edgy plastic around the Phantom turns me off - not as clean looking as the 600T, IMO. The FT02 is beautiful, though; wish I kept mine. lol... I was like, who's this "Dangman" guy... sounds familiar... :p yup, that's how long it's been. Wish I had the time for this place like I used...

Barebone bench test IIRC, those ballistix required high voltage. do you have any lower voltage sticks you could try?

I'd re-seat the RAM (try only a single stick) and CPU. if those don't work, pull everything out of the case... http://hardforum.com/showpost.php?p=1033078594&postcount=3 If the barebone bench test didn't help, it's probably a failed mobo/cpu. do you have another stick of ram you could try?
