    one of those option is watchdog. Watchdog stops any overclocking attempts past a certain point.

    i'm also running an e6300 on d975bxb2- 2.8ghz w/ 1:1 ram ratio with just one jump in mch voltage the first thing that came up to my mind is to change the jumper to the pins 2&3, go into recovery bios and disable watchdog.
