I had some of the same issues. Stock temps, card and everything is clean as a whistle and I monitored temps, never above 70f. I think it's a driver issue.

It has been a while since I built my system (in sig), so things might have changed. But my steps any time something like this happens:
1. Unplug everything from the back of the PC. EVERYTHING.
2. Pop out the CMOS battery, leave it out for 15. This should reset any non-hardware overclocks...

I'll second Just Cause 2. Some of the shots from the mountaintop (and in the city) are pretty awesome. After about 2 hours, the game had some slight artifacts in really heavy scenes...so I'm guessing it was pushing the crap out of my HD5850...
