I have a workstation that has way too many empty slots, and I'm looking to upgrade the RAM--looking at 8GB sticks since it only has a single 8GB stick currently, but I could buy odd lots of say 3*8GB, or 1*8GB + 2*4GB.

I have a 7870--although it's not FC-WCed, it's strapped to a thick (38mm) 120mm AIO (Zalman LIQ-320) using a dwood bracket so you can add a 92mm fan. Also includes stock HSF.
