I have a new PC with Vista 64bit installed. My other software is Office Home and Student 2007.

The old PC has XP and using Microsoft Works Suite 2001 with Works 6.0.

Can I place the old HD with XP(not booting) in the new PC and transfer the files folders and other things I may need to new HD in Vista machine?

What I am trying to find out will the Home and Student 2007 open the older Works 6.0 programs.

Works Suite 2001 has Word 2000 and an Excel 97 compatible spreadsheet. Word 2007 also reads the wps format used by the other word processor included in Works 6.0. Office 2007 hould have no problem reading those as long as you saved the files in the default formats (doc/wps and xlr/xls). The database program has an unusual format and there is no direct support in Access (which isn't included in H&S 2007 anyways).
