I'm looking to do a build with an i3 2100 I have sitting around, and I thought an htpc/server might be a good application for it.

I don't want to run off of onboard video, though. So I need something as compact as possible, but will allow me to use a low profile 6570.

I'm also interested in the most compact mATX case possible, if I can't find anything that suits me in ITX.

Where? The cheapest I've ever seen is $80.

    Wesena itx4
    Dimension: ----- 240mm×250mm×100mm (L× W× H) [9.5"x10"x4"]

Not sure if it will fit that GPU or not...

I do like the Wesena cases. Unfortunately, you need a pico psu. I kind of find them a huge hassle since you have to buy the adapter separate.

Sorry for the late reply... If you get Intel's thin mini-itx board (the q77 one), it has the psu on-board. Just need to add the right power brick.
