So I went to fire up the battlefield 1 beta today and discovered my current card is too old (driver outdated and no newer version available).

Ordered a PNY 1060 (https://smile.amazon.com/dp/B01IR5MR32) from Amazon, how bad of a bottleneck will the rest of my machine be with this card?

Current system (circa early 2011)
Sandybridge i5 2500k at 4ghz
MSI P67A-C43 motherboard (I think this only has PCI express 2 x16 slot, not 3)
8Gb ram
MSI HD 6970
256gb crucial m3
2tb wd black
Thermaltake TR2 TR-600

looking to game at 2560x1600, single monitor.

will be a slight bottleneck but not to bad and with you running at 2560x1600 might not be a bottleneck at all.you would see more of a bottleneck running at lower res

you be fine.....that game pushes 6 threads well so dont plan on doing a lot of multi tasking;) could always spend a hundred and drop a Xeon E3-1230 in it

Your monitor is 1920 x 1200. A gtx 1060 (3 or 6gb) will be fine. Your i5 will run it fine as well.

Monitor is 2560x1600, but I don't need to max everything out. Most of the gaming I do is still older games anyways.

Turns out that the 1060 was a great choice. Picked up another 16gb of ram and have been getting 60fps on ultra @ 2560x1600. Some tearing and dips down to ~48fps during crazy explosions and stuff. Overall, totally stoked with the purchase.

CPU is probably at 50%

Your CPU isn't the bottkeneck. Open up task manager or perfmon while playing the game. Graph CPU usage. Report back.

I have a similar system. I just installed a new 1060 6g and have an i5 2300.

The machine just plows through bf4 with everything on ultra. (With bounce off I was averaging 100fps).

I did notice my cpu was maxed the whole time, so I might be bottlenecking somewhat, but at those frames, I'm not going to notice.
