Wife "accidentally " deleted 8gb of movies off our HD digital camcorder. I was able to undelete them, but they will not play. The few pictures that were on there can be read fine after being restored. The movies can't be read by quicktime or anything else.

Any idea what I should do to either modify them or whatever to get them to play?

how much writing was done before they were undeleted?
chances are part of the data got overwritten, so not all the data was recovered, causing a corrupt file.

what are you using to try and watch the videos?
I believe VLC will play MOV files; might be worth a shot.

When it comes to undeleting videos. It has to be a perfect restore. I hate to say it. But it is probably gone. Might be some data left to play parts but will probably never be 100% again.

Try running it thru a video converter program. Its a long shot but it works sometimes. I have used AVS to salvage mess up files before with a surprising rate of success.
