I can't find any references on getting more then 2 displays in a usable gaming mode (under windows) on a SLI card setup. How likely is it that nVidia will spend any time getting this working?
I don't mind disabling extra monitors to run SLI in a game, (rebooting is silly and the 80 beta drivers are still very questionable on this ability) but it should be a smooth transition between.

Ati has only a tiny mention of Crossfire's multi monitor abilities, from the crossfire faq:

11. Can I use the CrossFire platform to drive multiple displays?

A. Yes, the CrossFire platform will work with ATI’s SurroundView™ multi-monitor technology to enable up to 5 separate displays.

So now that we have all this horsepower why the hell can't you use 3 or 4 monitors in a SLI configuration for gaming? Will Ati do any better?

Why wouldn't you be able to?

You just need more than 2 video cards! 2x 7800GTX in SLI, 1x dual-output GeForceFX 5500 in an exra PCI slot. Taddah! Three displays!

OR, you can get three displays out of a single dual-output video card (ATI or nVidia) and the corresponding motherboard (ATI dual-output Radeon + Xpress200 integrated = 3 monitors; nVidia dual-output GeForce + GeForce 6100 or GeForce 6150 integrated motherboard = 3 monitors)

All supported natively in the drivers...which is pretty cool, IMHO!

Horizontal span lets you use two monitors as a single larger screen but only off the same card. Ideally with SLI enabling a third or 4rth display the following should be possible: for example 3 2005fpw's would be 5040x1050 widescreen or 3150x1680 flipped 90 portrait. Flight & racing sims would be awesome in 3 monitor widescreen, for that matter so would anything with inventory windows or in-game maps. PCI or Onboard video aren't going to cut it.
