I've been playing with Server 2012 at home, just trial and error mostly. But I would like to rename my forest to a .local from my personal .com

Is there an easy way to do this?

I haven't done this for a long time, the last time I did this was in 2003 and it was like a bad day at the dentist.

I expect a domain rename in 2012 is pretty easy now?

isn't .local frowned upon now, due to conflicts with apple/bonjour stuff? (although I've still used it somewhat recently myself)

Yes .local conflicts mainly on Linux systems in my experience.

In my office a I just removed a few letters and ended up with ".lol" We're just the developers and back-end support people, so why not be funny?

i like .lol

I used .lan in my last company to avoid the issues with our macs.

current company we use office.companyname.com

Currently, I'm setup as lan.domain.com but I wasnt sure if that was the wrong way to do it.

domain.lan is typically what I have used for my few companies. However my current one uses domain.domain2.domain3.com

Good thing I dont manage the forest. ;)
