Really want to build a Mini-ITX gaming rig...advice?

Like the title says I really want to build a ITX gaming rig.

I already have the hardware from my current rig except case, motherboard, possibly smaller power supply, etc for the ITX build.

My requirements are decent air flow, water cooling for the CPU (thinking something along the lines of a single 120mm radiator like a H50) and it has to be SMALL...I see all these ITX cases that are basically Mini-ATX case sized...don't want that...I want a small box.

My hardware going in is:

i7 2500K
Gigabyte GTX 580 (triple fan)
2x4GB DDR3

Any advice on the best case and cooling?

ALSO...is it SAFE to cut/remove the wires from the PSU that arent being used? For example, instead of having a bundle of unused cables, can I not just remove them? Skillfully of course!
 
Yeah I did. Final specs were the same as above.

Was able to comfortably fit a H70 with dual 120mm fans for Push/Pull :D
