So I'm putting together a file server to upgrade my current setup and am going to have 8x 2tb drives... I'm wondering what a more ideal data redundancy setup would be (I'm only worried about drive failure with this machine)

setup will be 8x 2tb green wd drives and a highpoint rocketraid 3320 (already had this) and it supports raid 5 + hotspare and raid 6 so im wondering which would be the better setup as fair as surviving disk failures?

For 8x2TB WD Green I'd do RAID6. If one fails on a RAID5 set it'll take a while to rebuild that data...and you'd be vulnerable to a second drive failure during that time. RAID6 would protect you.

Raid 6 for sure.

I have an adaptec 5405 in raid 5+1, but i only have 4 hard drives. If I had as many as you, I would go raid 6.
