why am I seeing one DP and two DVI instead of the reverse? I'm pretty sick of DVI at this point.

Likely because DP adoption is not quite there.

One thing being showcased with the new cards (including the rebadges) is Eyefinity without using DP or Active adapters, like how Nvidia's cards can do Surround.

Although this is kind of annoying with them going to DP->MiniDP->DP. Maybe should've just a bought a DP cable and used the adapter.

My monitors are on the older/cheaper side, so I'm a-ok with DVI. Only one of mine does DP, the others are DVI.

Yeah, DP is far from 'here', chicken and the egg sorta thing. I still use DL-DVI for my 30", and it's the only one with a DP port on it; and that's mostly because I haven't gone out and bought a cable.

Even worse for DP is that HDMI and DVI share the same TDMS setup- and since a DL-DVI port can be passively adapted to support HDMI and VGA, DP really loses the flexibility battle. And HDMI is absolutely not going away.
