Questions about 5.1 audio on 3rd gen Apple TV

Is it correct that Airplay does NOT output 5.1 sound, only stereo?

It seems that only iTunes movies output 5.1 sound. Youtube movies and Amazon Instant Video both coming through in stereo. I only sampled 2-3 movies, including Independence Day and Anger Management. Checking the same movies on iTunes vs Youtube and Amazon to verify this. It sounds like Apple is sabotaging their competition. Fair assumption?

This is not Apple sabotaging the competition, it's actually the other way around. The competition, Youtube being the primary offender, refuses to release proper app support for iOS based products to support these types of things. It wasn't until just recently that we finally got 4k UHD support from Amazon on Apple TV. Youtube just outright won't support it, for whatever excuse they've invented.

Note that Netflix w/ up to Dolby Atmos & Vision work just fine on iOS products which is evidence enough that this is Amazon & Youtube's doing, not Apple's.
