I need to edit a couple of PDF's (edit both text and create/edit fields) in the document. I do not want to pay an arm and a leg for Acrobat.

    What do you guys recommend?

Acrobat is the first suggestion, honestly

InDesign is nice for editing PDFs as well, it also costs more than Acrobat (ok so thats a downside), but has A LOT more features

StarOffice/OpenOffice can WRITE PDFs, but cannot EDIT previously created PDFs

only thing I know of thats free is Foxit...

    could maybe try this:

Nuance makes some good PDF editing software for $100 or less.

http://www.pdfescape.com/pdf/account/ is a free online editing tool. Since PDF's are finished, you can write over them, not necessarily edit them. Maybe with Acrobat Professional or something high end paid for. Anyways, this site lets you use a 'white out' tool and you can insert new text as well as add fillable forms and check boxes to PDF's. You can also rearrange a PDF page order. I've searched up and down for something like what you are looking for and this is the only free editor I have found.
