I'm thinking about going Nvidia Surround very soon and was worried if my Corsair TX850 will be able to run my GTX 480 SLI setup + 2 additional monitors?

I've run mine temporarily on that psu however I tend to think you'd be nearing that PSUs limit. Of course, it depends even more on additional hardware or overclocking excluding external monitors.

No OC on the GTX 480s due to me being close to the limits already. How much does a monitor typically put out in watts?

If you don't do DC projects (which puts 100% load on your GPUs and/or CPUs 24/7), or extreme benching, it will be fine.

Just watch out for the cooling for the PSU.

Not the optimal temperature, noise, or longevity range but that 850TX should be enough for GTX 480 SLI;
235W - Core i7 950 @ 3.8Ghz + mobo + single HDD at full CPU load
524W - Two GTX 480 at full GPU load
---
Total: 759W at full CPU and GPU load.

Roughly 81W leftover on the +12V rail. So yeah cutting it very close but doable.
