MESH or add another AP?

I currently have an edgerouter X, and running a Ubiquiti UniFi UAP AC Long Range (UAP-AC-LR).

I have some significant deadzones in my house.

I admit I don't know much about networking. Can I add another UniFi AP and have it work like a MESH? same SSID?
or am I better off just getting something like the eero?

You can adopt another unifi wap via wired, then deploy it wirelessly where needed, if you allow it, they will mesh. I have a LR on the front of the garage for outdoor waps to mesh to, though they are all set to auto power.
My suggestion would be to add more (not long range) and hardwire what you can, put TX power on low and allow the devices to move to the wap with better signal.
