I am trying to figure out how much my son would need to build his own keyboard. Is 200usd enough or will he need more? I have been looking on kbdfans but since ive never built one(own a logitech g915 lightspeed) I am unsure what a good starting point is.

I think it would be. You could easily spend $150 on keycaps alone, but there are lots of good PBT sets available for around $50. Leaves $150 for a chassis, PCB, switches.

Mechanical Keyboards | Recommended Products | Drop - may be a good resource. They sell a variety of completed keyboards as well as parts, so you could get an idea of prices.

This kid seems pretty knowledgeable. Im actually close to taking the dive myself in building one. Seems fun.
