The desk surface is 72"Wx28"D. I'm looking for something close to veneer, but thicker and more durable like truck bed liner and also slick/smooth enough to use a mouse on it. Anything like the texture of a Ratpad that comes in large enough sheets that I can cut to fit the desk top?

Formica is the name brand of cabinet top covering that uses Melamine. Definitely not paper thin. You use a type of resin to apply it normally.

Alibaba has large sheets of ESD rubberized material. It is what my Lab people order to replace their workstation tops.

Cant link to it because I'm at work, but if you search for 'ESD table mat', I'm sure you'll find something.

I use a MTG play mat, might not be as big as what you are looking for but it def works well
