is DRAM:FSB Ratio still a thing with Ryzen, what should it be?

There is a ratio but it's not with FSB, its with the Infinity Fabric, or IF. Ya want IF to run 1:1 ratio. General advice is to get 3600mhz with best timings you can. Max speed while under 1:1 ratio is 3733mhz. In general, there's no gain to going really high speed ram due to the multi.

i've seen some reports show some slight gains with lower CL, as to say 3400 @ CL15 or CL14 would be better than 3733mhz @ CL18

LOL. I run my 3600 RAM at 3800 with IF at 1900. Every test I have done shows that to be the best performance wise. I tried that 3733 BS and 3800 scores better all around.

i wouldn't be too surprised your zen 2 based ryzen supposedly has some nice improvements to the memory controller over zen.
