If you want to record video, there is an app that you can get through cydia that will let you record it right on the device itself. I'll try to look for the name of it for ya edit: the app is called ScreenRecorder

If you run OSX though (or a hackentosh) you can use the iphone SDK emulator and record it directly on the computer. If not, jailbreaking is probably your only easy solution. Either that or recording it with a video camera. good luck
