Situation: Win 8 Lenovo laptop is borked - necessitating reinstalling the OS - decided to ditch Win 8 (hatedit) to go with something that works, i.e. Win 7 Pro. The laptop uses UEFI.

Steps, as I understand them: please correct any errors.

Having removed laptop HDD and confirmed it is working and wiped it using my desktop, reinstalled.

Connect USB media into Desktop and format it for FAT32,
Copy Win 7 Pro 64 disk onto USB
Insert USB into laptop, boot and install from USB

Anything I am missing?

Download the Windows USB tool here.

This will load the iso of win7 to a usb pen and make it bootable for the installation.

Also make sure you disable Secure Boot if it's on.

Make sure you select UEFI:DVD-Rom or whatever from the boot menu, not just DVD-Rom.

Also, installing UEFI from USB can be a bit flaky if the ISO->USB utility doesn't get it right. If you can't get it to work, just burn the 7 ISO to DVD.
