Old embedded browsers are a popular way to exploit security weaknesses and attack the system. It's a very bad idea to have IE or Edge components anywhere installed.Who cares set w/e you want as the default and move on. It will just reinstall every update.

Old Edge is deeply integrated into the OS, just like Cortana, you can remove them, but it can break certain things, even other thrid party apps that expect them to be present on the system.

And IE 11 will continue in "extended" support for as long as the versions of Windows that included it (up to and including the current 20H2 version of Windows 10) remain in support. No new features will ever be released for IE 11 while only critical security fixes will continue.
