How can I print to my usb/parallel printer wirelessly?

Can I just get a usb or parallel to rj45 adapter, and connect it directly to my router? Would I be able to print from a wireless desktop or laptop that way?

I really have no idea when it comes to network printing.

Here's another option. I have an old PC that I am going to set up Ubuntu server on. Can I install the print server option it has, connect that printer directly to that computer, which is connected to the router? Would that work?

yes, you could use an old pc as a print server, just make sure you have it shared and connect successfully from your other pc.
