Help me spend my money on a new display

So I'm not typically one to ask for advice, but I've recently started upgrading my desktop and the last component to be purchased is a new monitor. If it were a few years ago, I'd probably just go with a 27" 1080p IPS and call it a day, but I've been there (and done that a few times), and there are just way more options today.

A little background for you all to help your recommendations - In the last few years I've owned or tried the following displays in computing settings.

1. Hanns-G 28" 1920x1200 LCD
2. LG 27" 1920x1080 LED IPS
3. AOC 27" 1920x1080 LED IPS
4. Samsung 32" 1080p Smart TV
5. LG 25" 2560x1080 LED IPS Ultrawide
6. AOC 29" 2560x1080 LED IPS Ultrawide
7. Acer 25" 2560x1440 LED IPS
8. ASUS Zenbook with a 13.3" 3200x1800 IPS touchscreen

From trying all of those displays, in addition to using the typical HP/Dell business class units in work/school settings, I have a decent idea of what I like and what I don't.

Likes - IPS colors, 21:9 display widths, 16:9 display heights, 16:9 aspect ratio, high PPI
Dislikes - 21:9 display heights, low PPI

Overall, I haven't disliked my 21:9 displays per se, but I'm getting the feeling that I miss the height of a 27" 16:9 display over that of a 29" 21:9. I feel like one of the 34" 21:9 displays might fit the bill, but I'm not ready to spend almost $1000.

My constraints are as follows. I'd like to buy the display somewhere that I can easily return it if it has any defects (dead pixels, etc.) so Amazon or BestBuy are probably my target. I don't want to drop a lot of cash on a display at Newegg, find out it has 1 or 2 dead pixels, and be refused a replacement. My price benchmark is probably the cost of that 40" Samsung 4k everyone is raving about, so let's say I'd like to keep it under $750 total out the door. I do a lot of document writing and editing, some amateur photo work, no video creation, Netflix watching, and gaming (some FPS (TF2, BL2, etc.), some simulators (Train Sim, War Thunder, etc.)). I will be sitting about 3 feet from the display itself. Driving the display will be an EVGA GTX 980 and an i7 5820k.

Feel free to throw out any suggestions. Single monitor, triple monitor, TV/monitor combo, etc. I know next to nothing about all of the new g-sync and free-sync technology that is out now, and I'm probably not very educated in the realm of different panel technologies.
