I have a computer that I would like to put Server 2k3 Pro on and make it a domain controller. I have spare NICs, but do I need 1 or 2 NICs?
 
Depends on what application your going to be using the server for, if your just using it as a domain controller, one NIC will work just fine.
 
Domain Controller (w/AD)/File Server

Would I go Endian FireWall >> DC (enable DHCP w/2 NICs) >> Laptop?

Fav.Linux Firewall Distro -> switch -> DC and anything else you want.

Same setup I have.
