Standoffs are extremely important. Do not skip them. For one-off testing or troubleshooting in an open test bench, sure. But in an all-day rig: standoffs provide electrical grounding through the case and important structural rigidity. Without them, components can warp the board and isolated static surges can wipe out important SMICs.

Not me. I watch what I'm doing and when I drop a screw, I find it and put it where it was supposed to go.
