I want to disable the Windows key on my keyboard (it minimizes any open window if accidentally pressed).

There is a solution posted here for XP but it does not work in Vista (when you try to enter the numbers in REG_BINARY it doesn't let you paste or enter those numbers):
http://support.microsoft.com/kb/216893

I found another method here which is supposed to work on Vista:
http://www.vistax64.com/tutorials/77881-windows-hotkeys.html

However, it does not work. After restarting the computer, the windows key continues to function as before.

Please help me find a solution before I am forced to resort to "physical" means!

Wait, what? You've screwed up your system if that's the case. Win+D should minimize all windows, as should Win+M, but pressing the Windows button opens the Start Menu.

Pressing the Windows button opens the start menu, and if you have any other full screen application open it also minimizes that application to show you how the start menu has been opened. This is quite obtrusive because it's right next to Alt and Ctrl so one missed key will minimize whatever app you're in.
